Galangal is an essential ingredient in Thai cuisine and is a relative of ginger. If you can only visit the Asian grocery store irregularly like us you can buy galangal in bulk and freeze it for later. It freezes really well and keeps a consistent flavour after defrosting.
To make defrosting small portions easy, simply cut the galangal into small pieces before freezing. Use a really sharp and sturdy knife as they are really tough.
Freeze in an airtight container for many months.
